Veal Scaloppini
serves 4
Ingredients
- 1 T bacon fat
- 1 ea small onion, chopped
- 16 ea Crimini mushrooms, sliced
- 1 lb veal scaloppini
- 2 cl garlic, smashed
- 1 C dry white wine
- 16 ea green olives, pitted and halved
- 1 T butter
- parsley, chopped
- Parmigiano cheese, grated
Instructions
- Sauté the onion in the bacon fat until caramelized. Add the mushrooms, cook 3 to 5 minutes, then set aside.
- Season the veal, then sauté in olive oil and garlic.
- Move the veal and garlic to the pan with the onions and mushrooms. Deglaze the veal pan with the wine and reduce. Return the veal, with the onions and mushrooms to the veal pan, add the olives, finish with the butter.
- Plate, garnish with the cheese and parsley, and serve.
